E is for Easy Meal (that's healthy too!)
I am so grateful when I find an easy meal that is also healthy. Sometimes the homeschooling lasts a good part of the day and I feel tired when the time comes to make dinner. It is such a big help to have a nutritious meal that doesn't take all day to prepare. Therefore, here is my easy meal for this week to share with you. Cheesy Chicken and Rice Casserole
1 can (10 3/4 oz.) Cream of Chicken Soup
1 1/3 cups of water
3/4 cup uncooked long grain white rice
2 cups fresh or frozen veggies
1/2 tsp. onion powder
4 skinless boneless chicken breast halves
1/2 cup shredded cheddar cheese
Directions: 1) Stir the soup, water, rice, veggies, and onion powder in a shallow baking dish. 2) Top with chicken. Season chicken as desired; cover. Bake at 375 for 45 minutes or until done. Top with cheese.
(If you have picky eaters that don't like veggies mixed w/ their rice - cook them separately. The rice still turns out moist and yummy).
